All Irish people wait for St. Patrick's Day as that is when you will find all the good Irish cooks preparing their favorite dishes. Well this is what happens in my family as all the women vie with one another to create the best dishes. If you are not Irish then you will not understand this but if you are then you will know what I mean. It is on St. Patrick's Day that old the old grandmothers recipes which have been handed down traditionally from generation to generation is prepared and presented at the dining table. This is one day when age old traditions are remembered and followed.
This recipe was adapted from a recipe in The Book of Regional American Cooking :Southwest by Jan Nix. It's a little gem of a cookbook and contains not only recipes for Southwestern dishes most people are familiar with, but also recipes for more native dishes like Juniper slow cooked lamb breast stew.
Place enough vegetable oil in the bottom of a skillet to have a thin coating. When the vegetable oil is hot, add in the flour coated pieces of meat and brown them. Heat up the crock pot while the meat is browning. When the meat is browned to your liking add in 2 cups of water and 3 to 4 bouillon cubes. You can also substitute cups of all natural beef slow cooked lamb casserole broth if you prefer. I have even used the little seasoning packets from beef flavored Top Ramen noodles.

Outdoor Grilling: When grilling your your meat on your outdoor grill you do not want to place them directly over an open flame. You should place a shallow pan of water between the flame and meat. Remember to check the pan to make sure the water did not all evaporate. It should take about two hours cooking them this way.
When you do not have fresh herbs, having dried Oregano, Parsley or Dill on hand will enhance the flavour of many meals. Dried herbs should be replaced every 5 to 6 months to ensure that they are still potent. In spring and summer, aromatic bouquets of Basil, Dill, Rosemary, Thyme, and Oregano seem to be ever where. Growing your own herbs indoors is very rewarding. Parsley enriches any soup stock or lamb stew. It relieves bad breath when it is chewed after a garlicky meal. Mint will balance a spicy meal. Have fresh cilantro in home made salsa or as a salad green. Cilantro in a sauce with shallots, ginger and chilies goes great on salmon.
For a sit down dinner, you can create the most beautiful St. Patrick's Day setting with just a few simple touches. The key is to use things you already have around your home. If you do not have a green tablecloth, you can use a sheet or just a piece of green fabric to bring festivity to the table. On top of the tablecloth, place a white table runner with a nice crystal bowl filled with fresh green apples. A pedestal bowl works the best with is not necessary. White placemats and green cloth napkins are a great extra touch but not necessary if you do not have them.
