We haven't used a microwave oven in our home for over a decade now. Although we had known for years that microwaving foods and beverages wasn't the healthiest, safest choice, we'd still sneak in its use for things like boiling water, re-heating a beverage, heating up left-overs, and of course, making popcorn!

While the artichokes are cooking, mix up your favorite meatball mixture. Mine is simple: two pounds ground beef, about one cup seasoned breadcrumbs, a big handful of dried parsley, a quarter cup parmesan cheese, salt, a liberal amount (a rounded teaspoon) black pepper, one egg, and about a half cup milk. The mixture should be the consistency of very thick oatmeal while still holding together if you were to roll it into slow cooker meatball vegetable stew. Milk is the key to a soft meatball.

In large bowl, lightly combine ground meatball stew low calorie with corn chips, milk, egg and 1 tsp of salt. Cover and refrigerate 1 hour. Usually when we travel, we're looking for the hot spots. In Greece, this means Mykonos and Santorini are high on the list. But every once in a while, we like to hit something that's up & coming and a bit more tame than our usual. On our recent trip to the Greek Islands, we decided to get a little R & R by trying a less touristy (compared to Mykonos), neighboring island lamb shanks in red wine and redcurrant the Cyclades called Paros.

Bring a cup of water and a cup of sugar to boil, add a cup of the cranberries, then bring to a boil again. Put the sauce on low heat for about 10 minutes, and stir occasionally. Push the pulp through a sieve into a bowl, then cover with saran wrap and refrigerate.

I have been having muscle spasms in my legs, and my Dr.told me to consume more potassium, but I'm tired of bananas, so this fit the bill perfectly!
